Allspice (spice)
Like cloves, nutmeg, and cinnamon.
Fruits, pear or apple sauce, dried fruit compotes, cranberry sauce, chutney, cabbage, curries, pickles.
Ancho pepper (spice)
Mildly hot; richer than cayenne.
Eggs, ocean fish, poultry, meat, broccoli, Brussels sprouts, collards, stews, mayonnaise, BBQ sauce.
Anise seed (spice)
Sweet, licorice-like flavor.
Chinese and Moroccan dishes, stewed or poached fruit, squash pudding, pear smoothie; nectarine or peach pudding, certain meat dishes.
Apple pie spice
Sweet; contains cinnamon, fenugreek, lemon peel, ginger, cloves and nutmeg.
Winter squash, sweet potatoes, apple, peach, pear, nectarine, or squash pudding, fruit sauces and compotes, oatmeal. May substitute for pumpkin pie spice.
Basil (herb)
Savory, aromatic. Fresh basil is most potent.
Italian dishes, pesto, pistou, salad dressings, green salads, tomatoes, spinach, broccoli, squash, soups, red sauces, beef, lamb, poultry, eggs, fish; good with garlic, oregano, parsley, red or black pepper.
Bay leaf (herb)
Pungent, aromatic; remove before serving unless ground finely.
Soups, stews, especially chicken, beef, fish, tomato, carrots, turnips, boiling artichokes or beets, sauteed Brussels sprouts; goes well with most other herbs.
Caraway (spice)
Aromatic, warm flavor.
Cabbage, carrots, beets, potatoes, apples, apple sauce, Brussels sprouts, cauliflower, kale, cabbage salad or pickles, Greek, Israeli, Swedish dishes.
Cardamom (spice)
Sweet, slightly peppery, cross between lemon peel and sage flavor.
Scandinavian soups, stews, sauces, poultry dishes, puddings, carrots, sweet potatoes, Moroccan BBQ Spice Mix, goes well with nutmeg, ginger, cinnamon.
Celery seed
Slightly bitter; use a very light hand (a pinch or two).
Tuna, chicken, turkey salad, tomatoes, cabbage, kale.
Chili powder (spice)
Blend of red chile pepper, cumin, paprika, oregano, garlic and often other spices and onion powder.
Chili, soup, stew, casseroles, especially tomatoes, carrots, poultry, red meat, wild game, good with garlic and onions.
Chile pepper (spice)
Spicy, mild to very hot.
Asian, African, Latin American, Mexican, Moroccan, Indian, Italian, European, and American dishes, eggs, chicken, turkey, beef, BBQ sauce, stews, marinades.
Chipotle (spice)
Rich, smoky, mildly spicy (not as hot as cayenne)
