Herbs & Spices
Taste, Properties & Uses

Chives (herb)
Mild onion like flavor; fresh or freeze-dried.
French cuisine, eggs, fish, poultry, salad dressings, tuna-, chicken-, or egg salad, cauliflower, tomatoes, good with black pepper, garlic, parsley; great garnish.

Cilantro (herb)
A.K.A. Chinese parsley; slightly hot and pungent.
Asian, Caribbean, Latin American, Chinese, Thai cuisine, avocados, guacamole, tomatoes, salad, fish, shellfish, chicken, good with garlic and red pepper.

Cinnamon (spice)
Sweet, spicy
Mexican, Chinese, Middle Eastern cookery, winter squash, sweet potatoes, carrots, apples, pears, fruit sauces, chutney, compotes, puddings, and oatmeal.

Cloves (spice)
Sweet, pungent; good.
Chinese, Indonesian, and Moroccan cookery, fruit sauces, compotes, chutney, spiced cider, stews, meat, duck breast, good with cinnamon, nutmeg, ginger.

Coriander (spice)
Spicy, slightly pungent.
Carrots, curries, spice rubs, Moroccan BBQ sauce.

Cumin (spice)
Aromatic; buy powder and whole spice seeds.

Dill weed (herb)

Garlic (spice)

Ginger (spice)
Aromatic, spicy-pungent. Buy ground powder and whole, fresh ginger root; each offers a slightly different flavor.
