Herbs & Spices
Taste, Properties & Uses

Juniper berries (spice)
Slightly tart, earthy.
Spice rubs for beef, bison, rabbit, venison, domestic and wild fowl, jerky, steaks, spice rubs, stews, roasts.

Lemon peel
Zesty, light, fragrant.
Apple, pear, apricot compotes, sauces, chutney, carrots, winter squash, sweet potatoes, chocolate.

Mace (spice)
Sweet, aromatic.
Baked goods, applesauce, fruit chutney, spinach carrots, cabbage, pork, spice rubs for pork.

Marjoram (herb)
Similar to oregano; mild, slightly sweet.
Italian and French dishes, soups, stews, tomato sauce, stuffing, dark greens (spinach and others), root vegetables, eggplant, lamb, good with garlic.

Mint (herb)
Cool, refreshing.
African, Israeli, Greek, Southern (U.S.) cookery, iced tea, fruit salads, sauces, chutney, lamb, poached pears, berries, chicken, lamb, pork, hot tea, sherbet, ices.

Mustard seed (spice)
Piquant, sharp, mildly hot to spicy hot, pungent.
Pickling (cabbage, onions, beets, etc.); Indian cookery, homemade mustard, spice rubs, pastes.

Mustard powder (spice)
Same as mustard seed.
Beef, lamb, pork, chicken, turkey, fish, shellfish, eggs, spice rubs, marinades, barbecue sauce, salad dressing, mayonnaise, kale, collards, broccoli, Brussels sprouts, cabbage, cauliflower, beets, with red or black pepper.

Nutmeg (spice)
Sweet, pungent aromatic, slightly bitter.
French, German, Indonesian, Swedish cookery, winter squash, sweet potatoes, parsnips, beets, asparagus and spinach, apples, pears, strawberries, peaches, blueberries, puddings, compotes, fruit or squash smoothies, custards, eggnog, eggs, fish.

Orange peel
Tart, zesty, sweet.
Lightens winter squash, sweet potato, and chocolate dishes, apple, peach, pear, strawberry, cranberry, and raisin, compotes, sauces, chutney, pudding, oatmeal.

Oregano (herb)
Similar to marjoram but more intensely flavored.
Italian, Greek, Mexican dishes, tomatoes, zucchini, eggplant, chicken, turkey, beef, bison, lamb, eggs.

Paprika (spice)
Very mild cayenne; may be used more liberally.
Hungarian (goulash, paprikas), Moroccan, Spanish dishes, scrambled eggs, egg salad, fish, poultry, meat, cauliflower, good garnish, good with black pepper.

Parsley (herb)
Slightly bitter, sweet; may be used liberally.
All-purpose garnish for eggs, fish, poultry, meat, salads, creamy salad dressings, goes with most other herbs and spices, especially garlic, basil, and pepper.
